Then slowly add the sugar to the mixture mixing in about 1/4 cup of sugar at a time. After adding each bit of sugar, beat for about thirty seconds. Once you have added all of the sugar substitute, beat the ingredients together for about two minutes. Add a teaspoon of vanilla and the two eggs. Beat for another two minutes.

Then, in a separate mixing bowl, you will mix the dry ingredients together. First, put your 1 1/4 cup of whole wheat flour into the bowl. Add 1/3 cup unsweetened cocoa, 1/4 teaspoon salt, and 1 and 1/2 teaspoons baking powder.

Mix all of the dry ingredients together in the bowl, then slowly add them to the butter and egg mixture. Be sure to add this slowly into the mix, adding only about 1/4 cup of dry mix at a time. Blend for 30 seconds each time you add another portion of the dry mix.

Finally, you are ready to add the 3/4 cup of milk to the mixture. Blend for another two minutes. For the drummer in a metal pan. Bake at 350 Fahrenheit for about 30-35 minutes. Once the mixture is smooth, add the eggs one at a time. Beat the mixture for about a minute after each egg. Next, add 1 teaspoon of vanilla extract. Beat for one minute.

Then, you’ll add your dry ingredients. Add 1/4 teaspoon of salt, 1 teaspoon of baking powder, 1 and 1/2 cups of all-purpose flour. Once these dry ingredients have been added to the butter and sugar substitute, use a spoon or spatula to mix the dry powder together. Then use the hand mix for about a minute to mix all the ingredients together well. Make sure the dough is smooth and without lumps.

Next, add the batter to a metal loaf pan. Bake the cake at 350 Fahrenheit for about 30-35 minutes. Insert a toothpick after 30 minutes to test if the cake is done.

SUGAR FREE CARROT CAKE
The third of our diabetic cake recipes is for a sugar free carrot cake. Like the cake, this carrot cake is easy to make, although carrot cake includes more ingredients.

Ingredients:

3 cups of whole wheat flour

2 cups of grated carrots

6 egg whites

1 cup unsweetened applesauce

1 cup of milk

1 cup unsweetened brown sugar (choose your favorite brand)

1/2 cup of grapes (optional)

1/4 cup chopped walnuts (optional)

2 tablespoons ground cinnamon

1 and 1/2 teaspoons vanilla extra

1 teaspoon ground nutmeg

2 teaspoons of baking soda

2 and 1/2 teaspoons of baking powder

A glass baking dish
Instructions:

Start with your large mixing bowl. Add the egg whites to the bowl and beat with the mixer on low. Beat for about thirty seconds. Add the brown sugar and beat again. Next, add the unsweetened applesauce, milk, and extra vanilla. Beat until everything is well mixed.

You will use your fork to add the last ingredients. Start by stirring in the nutmeg, cinnamon, baking powder, and baking soda. Mix it all together with your fork. Slowly add the flour. Add the carrots. Finally, add the raisins and nuts. These last two items are optional, and you can substitute pecans, almonds, or any other dried fruit for the walnuts. Use your fork to stir the mixture for another 1-2 minutes. The mixture will be lumpy instead of smooth.

Spray a 9 × 13-inch glass baking dish. Add the mixture to the dish. Bake at 350 Fahrenheit for approximately 35-40 minutes. Test the cake after 35 minutes using the toothpick method.
